Hillsboro Cafe looks to extend hours, add staff

The owners of Hillsboro’s only full-service diner plan to hire more employees and extend their hours of operation within the next few weeks.
Derek and Kate Ehnert, owners of The Hillsboro Cafe, said the downtown restaurant may open Thursday and Friday nights by late September.
If patrons respond to the expanded hours, the cafe could serve customers on Wednesday and Saturday nights as well, Kate Ehnert said Wednesday.
“We’re thinking at a minimum Thursdays and Fridays and at most we’d add (two more nights), but that’s pretty optimistic,” she said.
